An obvious plug for eating more beef, but one that yields a variety of no-fuss, low-fat dishes for singles, couples, and families on the run. The staff of the Beef Board begins by straightening out the confused supermarket shopper: which cuts to look for (beef is now 27 percent leaner than two decades ago), storage tips, cooking techniques, tests for doneness, and substitutions. A large percentage of the more than 100 recipes are geared to 30 minutes or less preparation time; each dish includes, of course, a nutritional analysis per serving.
