I am your average American mother. We live on a very modest budget and I am always trying to find ways to both save money and feed my family healthy food. I have four small children and, like most kids, they are quite picky. They like normal food with normal textures and tastes. Throughout their childhood, a couple of my children have suffered from chronic constipation problems. These resulted in several trips to the doctor followed by meetings with specialists. I was told that I needed to get my kids on a high fiber diet. After researching whole wheat and the benefits of a diet rich in whole wheat, I found out that just one cup of whole wheat flour has 14 grams of fiber and over 16 grams of protein! I had to learn to incorporate whole wheat into my diet, but actually replacing my white flour recipes with whole wheat seemed impossible. I knew I had to switch for the health of my kids, but it was so much easier to cook with white flour. I also found that buying the whole wheat products in the store was more expensive than purchasing the white flour counterparts. After I began to grind my own wheat and cook with wheat, I realized something very important...wheat is cheap! If I could grind my own wheat and make my own pasta, bread, pie crusts, etc., I would save tons of money! This began my years of experimentation with whole wheat. After years of experimenting with wheat, I have finally compiled a list of recipes that my family loves that incorporate whole wheat.
