While the section contains a lot of recipes, here’s a couple I love.

Orange Salad (Almost Like Dessert)
1 Container (12 oz) whipped topping
1 small carton of cottage cheese (small curd)
1 can mandarin oranges (drained)
1 box [3 ox] gelatin, orange flavor
Mix whipped topping and cottage cheese, add drained mandarin oranges and gelatin (dry). Stir together and refrigerate for about one hour. Serve.

It’s easy, fast, inexpensive, yummy and even a family favorite.

Tex-Mex Dip
1 can chili
1 can tamales, chopped
1 lb Velveeta Cheese, cubed
1 onion, chopped
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce

Combine all ingredients. Simmer slowly. Stir mixture until cheese melts. Serve with taco or corn chips.

We had this at an office party recently. It was fabulous. The serving dish was left empty and everyone wanted the recipe. The person who brought it was grinning from ear to ear from all of the compliments.

Overall

The recipes were quick to put together and used things that I already had in the kitchen. Nothing took a huge amount of preparation or planning ahead. The dishes were easy to fix, low cost and my family loved them.

It is very simple to substitute fresh vegetables or low fat/low sodium items in the recipes in order to meet specific diet needs and still keep the meal low cost.

Note: I used mostly things I already had in my pantry or fridge, like chicken, canned soups and beans, and dried pasta, so my total outlay for all those recipes was really small. I spent only about $20 to add in the items I needed, like tortilla chips, cream cheese, flour tortillas, ground beef, etc. This cookbook rocks! If you don’t have it, get it now.

So, why did we put together this cookbook?

In our work of helping people overcome financial problems and issues we observed that a huge chunk of the family money is spent on food. Families have problems reducing the food expense because they eat out frequently. Preparing meals at home can be a pain, take up a lot of time and who has that kind of time or patience these days. So we gathered up the best cheap and easy recipes we could find and here they are to help you save your sanity, time and most of all, money.
