The authors list the basic nutrients with their purposes and continue with the simple truth of weight control with an Interesting activity for estimating how many calories you need daily. Vitamins and minerals are described in detail with their functions, sources and related deficiencies. Guidance for the decision to take supplements is provided. The importance of fiber and the types of fiber are clarified. Water is sometimes the forgotten nutrient, but not here. The many functions of water are explained and it is clear why our cells require this nutrient.

A very important skill, I believe, is being able to calculate the percent of calories from fat in a food. This concept is thoroughly explained. The calculation is very easily made although some people don't believe this until they have repeatedly used the equation to become familiar with it and can then use it with ease.

The composition of foods table clearly tells you the calorie content and grams of fat in each food. Browse through the foods table, become familiar with it and keep it handy for looking up foods. As you gradually increase your knowledge of what your diet consists of, and how you might like to change your diet, it will become easier to make the choices for yourself!

WATER, AN ULTIMATE SUBSTANCE Water, water is everywhere and most people still aren't drinking sufficient amounts. Although water has no calories, it is as important to drink 6 to 8 eight ounce glasses of water a day as it is to eat the proper amount of calories. Did you know oxygen is the only substance more important to the body than water? Water is the most abundant nutrient in our body (about 2/3 of our body weight) and is vital to human existence. The cells in your body require moisture to be healthy.

Ways in which water is important in nearly every body process:

1. Circulates through the body in the blood, body secretions and tissue fluids helping to carry nutrients and other substances to all the cell in the body to help meet their needs for proper functioning.

2. Necessary for all building function in the body and digestion, absorption, circulation and excretion.

3. Necessary for maintaining a stable body temperature. When your temperature rises, sweat is produced, evaporates and cools the body.

4. Essential for carrying waste material out of the body and helps form a soft stool which aids in preventing constipation and assists in the avoidance of painful hemorrhoids.

Through excretion and perspiration the average adult loses about 3 quarts of water daily. The amount lost is related to activity, temperature, functional losses (diarrhea, vomiting, etc) metabolic needs and age.

Nearly all foods, especially fruits and vegetables, contain water that is absorbed by the body during digestion.

Drinking beverages with some water in them doesn't mean you are getting sufficient water. Caffeine in sodas, coffee, tea, etc acts as a diuretic. You may notice that after drinking beverages with caffeine that you go to the bathroom more frequently. Thiat is caused by the caffeine not just that you drank something. Therefore, the more caffeine you have the more water you should drink to replace what is lost as a result of the diuretic effect of caffeine.

The elderly have a tendency to lose their desire for water and need to be reminded to drink a sufficient quantity of water.
