Raichlen has written a seasonal cookbook with a difference, for he has not limited himself to produce and "truly seasonal" ingredients like soft-shell crabs. He also highlights ever-available foods that seem to have a best season, along with a variety of holiday specialties. Information on buying, storing, and using each ingredient accompanies the appealing recipes. Carlman, in contrast, does restrict herself to seasonal produce, starting with early asparagus and concluding with fall's turnips and rutabagas. The introductory sections provide little more than basic information, and the recipes are nothing special. Marian Morash's The Victory Garden Cookbook ( LJ 9/15/82) remains the standard. JS
