The recipes, this time more closely paralleling their originals than in the earlier cookbook, were developed on a more elastic "food exchange program," one of the underlying planks of the regimen. In addition, each recipe is accompanied by per-serving counts of calories, protein and other food properties. By following directions meticulously the dieter will be able to enjoy dishes like African yam salad, Scottish potato-and-cabbage casserole, Irish soda bread, Swiss fondue, and desserts like Czechoslovakian cherry pie and chocolate-raspberry liqueur fondue.
