Gibbons is the author of numerous diet cookbooks; here she emphasizes herbs, spices, and "assertive" seasoning in creating lighter, healthier dishes that don't seem like diet food. Her recipes represent an interesting international mix, from Turkey to Yugoslavia to Indonesia. There is a slightly supermarket-magazine feel to some dishes, and short-cut ingredients such as low-calorie bleu cheese dressing do crop up; still, many recipes are far better than their cutesy names suggest. Go with the paperback. Better Homes & Gardens selection.
